Veggie Breakfast Omelette
- 1 whole egg, 4 egg whites
- 1/8 cup Kraft 2% shredded cheese
- diced zucchini, yellow squash, onion, green pepper, portobello mushroom
- dash of pepper
Beat eggs. Pour into non-stick pan. Throw the veggies, cilantro and pepper in there. This is easier if you scramble them instead of making an omelette. I can't seem to flip omelettes without screwing them up
I dice up the veggies and put them in little tupperware containers so I can just grab those each morning and throw the veggies in with the eggs.

You can use whatever veggies you like and use more egg whites too if you want.
